What is fragrant broken rice?

Vietnamese fragrant broken rice is generated from specialty fragrant rice varieties, such as Jasmine rice, ST25 rice, and KDM rice. Broken rice is actually whole rice grains that accidentally break during the processes of drying, transportation, milling, and sifting. Inside broken rice contains vitamins and minerals such as magnesium, calcium, fiber, and protein with high levels.

The broken rice grains will have a shape that is neither too short nor too long, usually equal to ⅓ or ⅔ of the whole rice grains. The rice grains are opaque white, with a thin layer of bran on the outside. When cooked, the fragrant broken rice will be fluffy, moderately soft and sticky, and will emit a very pleasant aroma.
